Sidamo is a province in southern Ethiopia which is the ancient home of both Sidama and Yirgacheffe coffees. Unlike our Harrar which is dry processed, producing a distinctly earthy cup, these beans are fermented in large vaults with water then washed of their fruit pulp instead of the more primitive piling the beans dry to ferment, then cracking off the husk. This gives our Sidamo a smoother, better balanced taste and a more aesthetically pleasing appearance. It shares the richer body of a Kenya with the distinctive effervescence of a Harrar.
